I call this disappearing for 3 reasons; the zucchini disappears in it, the pineapple all but disappears in it and it’s so good that it quickly disappears out of my kitchen!  I love making quick bread for so many reasons; it’s quick (duh), it’s easy and it’s always so good!  You can eat it for breakfast or a snack or dessert!  It’s that versatile!  Last year, when I was doing the local farmer’s market, quick bread was a big seller.  So I started experimenting with recipes and flavors.  I don’t think I had a flavor that wasn’t a hit!  But this Pineapple Zucchini Quick Bread had people coming back for more!

If you’ve never tried a zucchini quick bread, you are missing out!  Everything and I mean everything that I bake with zucchini is so, so good!  The zucchini adds so much moisture to the bread and doesn’t really detract from the base flavor of the bread.  I’ve made several kinds and each one is different but still so good!  The hardest part of the recipe may be the shredding of the zucchini.  I use my food processor but you can easy use a box grater, a mandolin, or any type of grater.

The secret for those of you that have picky eaters is to peel the green skin off the zucchini before you shred it.  Oh, and make sure no one is around when you make this recipe!  The first time I made something with zucchini in it, I didn’t peel it and hoped that no one would notice.  But I also promised my picky eaters full disclosure with anything I make so if they ask.  I do tell them but if they don’t ask, then….  Well, no harm, no foul.

One of them figured out that it had zucchini right away but thought they were so good that they ate them anyways.  And after he proved that he wasn’t going to die after eating zucchini in the baked item, then the rest followed suit.  Ok, I might be exaggerating a little…  but not much!  LOL  I figure if they don’t want to eat something that I bake, that’s totally fine cause I can find LOTS of other people that would be THRILLED to eat what I make!

With this recipe, between the pineapple and the zucchini, it creates this amazingly moist quick bread and it is soooo yummy!  Probably one of my favorites that I’ve made!  But then again, I do love quick bread and I do love zucchini in my quick breads and I do love pineapple so it was pretty much a given that I would love this one!

ps.  Make sure you use the Homemade Pan Release so your bread comes out of the pan nice and pretty!

Ingredients

Instructions
  1. Preheat oven to 350 degrees and prepare 2 loaf pans with homemade pan release.
  2. In a mixing bowl, combine oil, yogurt, crushed pineapple and sugar.
  3. Add eggs one at a time and mix well.
  4. Add dry ingredients as listed and mix until combined.
  5. Fold in zucchini and vanilla.
  6. Divide batter evenly between both loaf pans.
  7. Bake for 65-70 minutes or until a skewer or cake tester comes out clean.
  8. Allow to cool for 20 minutes before turning out of pan and placing on cooling rack.
