Fall is upon us here in Iowa!  Cooler weather, fall produce, football games and leaves turning.  And apple season in full swing!  I love caramel apples so much, I’m always on the lookout for good caramel apple recipes.  Today isn’t a good one, it’s an amazing one!  Caramel Apple Crumble Bars.  Can you say YUM?!?

But as excited as I am for fall, I’m just as sad to see summer go.  It seems like every fall I look back and wonder where the summer went.  This summer, though, we spent a lot of time playing (watching) baseball with both the boys.  And I spent a lot of time and energy trying to get our landscaping started.  We redid every bit of landscaped area in our yard.  Now, I just need to finish decorating and adding our own touch to it.  But that will come with time.  And until next spring, I get to play with all my fall/winter projects that I’ve been putting off because it was too nice to be inside all day.

And for now, we get to enjoy apple treats!  Today, they’re Caramel Apple Crumble Bars.  This recipe is made with a can of apple pie filling but if you wanted to, you could always make a homemade apple filling for it.  I haven’t gone apple picking yet but am hoping to make it yet before it’s too late.  And since I really want to have the fun of picking my own for some of my recipes, I just used a can of a pie filling this time.

The recipe is super easy!  It starts with a cake mix and only calls for 6 ingredients.  You make a base out of the crumb mixture and press half of them into the bottom of a bar pan.  Then I run a knife through the open can of apple filling to cut up the apples into more bite size pieces.  Pour them over the base layer.  Then you melt the caramel and milk together and pour that over the apples.  Mmmmmmm…  caramel over apples!  Evenly sprinkle the rest of the crumbs and bake!  Oh boy, they are soo, soo good!

After they’ve baked, you’re going to want to let them cool a little.  That caramel gets really hot and could burn you (not that I would know from trying to lick a bowl!).  Once they’ve cooled a bit, you can either have them warm or let them cool the whole way before eating them.  Either way, they are delish!  But if you do prefer them warm, that’s what they made microwaves for, right?  Warming up desserts!

Seriously though, you need to make these!  They are too easy and too yummy to not try!  Trust me!

Instructions
  1. Preheat oven to 375 degrees.
  2. Line a 9 x 13 baking dish with parchment paper or foil and grease with pan release.
  3. Mix cake mix and oats in a large bowl.
  4. Add melted butter, stir until crumbly.
  5. Press down 2/3 of the crumbs onto the bottom of the pan.
  6. Use a knife to cut the apple pie filling into smaller pieces.
  7. Carefully spread apple pie filling over the crumb crust.
  8. Add milk to caramels in a microwave-safe dish and melt on high heat for 30 seconds. Stir and repeat until caramel is completely melted.
  9. Drizzle caramel over top of apple filling.
  10. Spread remaining crumbs over caramel and press down gently.
  11. Bake for 18 to 23 minutes or until very lightly golden brown.
  12. Eat warm or cool, cut into bars, and serve.
