Donuts Hiding in a pie? Yes, PLEASE!!

Blueberry Donut Bomb Pie

A couple of months ago, I tried a new old recipe that involved using Twinkie’s to make a bomb pie.  It was sooo good that one of the people that tried it thought it was cheesecake!  Really!  So after the first bomb pie and realizing how easy it is, I decided that I needed to try to make another one but this time I was going to use donuts.  I’ve seen some recipes that used donuts but they were more chunks of donuts and I really wanted something a little smoother in texture.  And since blueberry donuts are my fav, I decided to try those first.  And since I didn’t get to eat any of them, I grabbed donut holes because they were on sale.

You make the donut bomb pie just like we did with the Strawberry Shortcake Pie but substitute donuts or donut holes for the Twinkies.  Add the rest of the ingredients and pour it all into a frozen or refrigerated pie crust.  I used deep dish because I wasn’t sure how full the recipe would make the crust and I didn’t want to risk it overflowing.  But as you can see from the pictures, I probably could have used a regular one.  My goal one of these days to actually figure out how to make homemade pie crust but we’ll see if/when that happens.

Blueberry Donut Bomb Pie

As the pie was baking, I was a little concerned about the fact that it was not looking real appetizing from the oven window.  It had a bit of a weird color to it. But when I asked for a second opinion from the hubby, he pointed out that it looked a lot like the same color of blueberry donuts before they’ve been frosted.  So I guess it was just me being a little unsure of my new creation.

Once the pie was done, I tried it alone and it was really good but I like to liven up my pie with something (ie. Whipped cream, fruit, glaze).  So I made some Triple Berry Compote since it’s so easy and it was amazing on the pie!  The berries really complimented the blueberry flavor of the donut pie!  And the compote has blueberries in it so they went well together!  I also thought a lemon glaze of some sort would be good on the pie as well.  I love blueberry and lemon together!

The great thing about bomb pies is that you can make just about any flavor by simply switching up the baked pastry base.  We have a really great local donut shop that makes the best cake donuts and now that I know the donut version of this recipe is a success, I can’t wait to try it with some of those donuts!  They have just about any flavor you want but they are basic donuts.  Not the crazy bacon and maple kind that have been all pimped out like at some of the newer donut shops.

Instructions
  1. Preheat oven to 350
  2. Break up Twinkies into 6-8 pieces into a mixing bowl.
  3. Add the butter, sugar, eggs, vanilla and vinegar. Beat until combined and smooth.
  4. Pour into pie crust and bake 38-44 minutes or until golden brown.
  5. Let cool completely.
  6. Spread strawberry glaze over top of pie. Add sliced strawberries to the top of the glaze.
  7. Serve with a dollop of whipped cream.
